HACCP

We prepare good manufacturing practice (GMP) and HACCP documentation tailored to your operation, for a price agreed in advance.

What we offer

  • Complete preparation of GMP and HACCP documentation
  • Advice while you put the system into practice
  • Long-term cooperation on keeping the documentation up to date
Our documentation is accepted by inspectors of the State Veterinary and Food Administration (ŠVPS SR) and the public health authorities of the Slovak Republic, and it follows ISO standards.

What is HACCP

HACCP (Hazard Analysis and Critical Control Points) was developed in the USA in the 1970s for NASA. It has been part of EU food law since 1992.

The analysis aims to:

  • Identify hazardous raw materials and foods (pathogens, toxic substances)
  • Find out whether they support the growth of microorganisms
  • Identify the sources of hazards and the points where contamination can occur
  • Estimate how likely microorganisms are to survive or multiply
  • Assess the severity of each hazard and its risk

Why it is required

Across the EU, Regulation (EC) No 852/2004 requires every food business to work with procedures based on the HACCP principles.

In Slovakia, the Food Act No. 152/1995 and the Food Code have required GMP and HACCP since 1 January 2000 from everyone who handles food or places it on the market: in preparation, processing, production, packaging, storage, transport, distribution and sale.

What the documentation contains

We prepare it according to Chapter VIII of the Slovak Food Code, “Principles of good manufacturing practice”, and EU legislation. GMP documentation consists of:

  1. 1Work procedure
  2. 2Technical and technological specification
  3. 3Production procedure
  4. 4Machine operating standards and equipment assessment
  5. 5Hygiene regime and sanitation programme
  6. 6Metrology programme
  7. 7HACCP plan
  8. 8Other internal guidelines

Risks without a working system

A missing or poorly designed system can lead to:

  • Harm to your customers' health
  • Loss of customer trust
  • Legal proceedings
  • Fines from the inspection authorities
